How is Olive Oil Produced
Olive's Harvest
The olives are harvested either by hand or mechanically, using special machinery that gathers them directly from the trees.
The olives must be harvested at the correct degree of ripeness from healthy plants, usually grown at the foot of hills or on their slopes.
Windfalls must not be harvested, because they give an oil of bad quality. For the same reason, olives must be crushed immediately after harvesting: a delay can compromise the quality of oil and increase its acidity.
